NSW CPS Cross Country
Congratulations to Eli Cassidy, Emmett Crocker, Henry Gooley and Jed Newman who competed yesterday at the NSW CPS Cross Country Championships in Sydney against the best Catholic schools runners in the state. Special congratulations to Jed who, after finishing 4th, has been selected in the NSW All Schools Cross Country team.
Northern Region Athletics Carnival
This Friday the Northern Region Athletics Carnival will be held in Goulburn. Congratulations and best of luck to all our representative athletes. A reminder to all that, even though we compete in individual ages at our school-level carnival, representative selections are made based on age groupings of Junior (8-10), Intermediate (11) and Senior (12-13).
Annual Satisfaction Surveys
Our Annual Parent Satisfaction Survey closes this Friday. The data gathered provides us with valuable feedback that informs our Annual and Strategic Plans, so I encourage any family who has not yet submitted a response to do so.

School Banking Survey
The Mt Carmel School Community Council is seeking advice from families about their opinions on school banking, and I strongly encourage all families to contribute.
In December last year the Australian Securities & Investments Commission (ASIC) Review of School Banking Programs Report was released and included a recommendation for school communities to assess the appropriateness of their participation in school banking programs.

Vinnies CEO Sleepout and Pyjama Day
Next Thursday 17 June is that night that I will be joining a number of Catholic School Principals and business leaders to sleep rough at the National Arboretum in Canberra and raise much needed money for those in our community who can't afford the basics - food, education, utilities and even a place to call home. Next Thursday, as a House Spirit Challenge and for a bit of moral support for me, we will be holding a Pyjama Day. Students can, for a gold coin donation, come to school in their cosiest PJs, slippers and dressing gown.
Open Classrooms and Reports
As we approach the end of Semester One, teachers are all working very hard to prepare reports, which will be sent home on the last day of term.
We are currently in the transition phase to a new reporting tool, and although most aspects of the report will be familiar to parents, there are some differences you may notice.
In Semester 1:
For Kindergarten students:
Achievement in each subject will be reported using a four-point scale (Well Above Expectations, Above Expectations, Meeting Expectations and Working Towards Expectations).
For Year 1 to Year 6 students:
Academic grades for each subject using a five-point scale from A-E will be reported using the NSW Common Grade Scale.
For all students:
Strand Achievement will be reported in English, Mathematics, Human Society and its Environment, PDHPE and Creative Arts using a five-point scale (Excellent, High, Sound, Basic, Elementary).
Engagement with Learning statements, which are taken directly from the Australian Curriculum, will provide specific information about your child’s Critical and Creative Thinking, and Personal and Social Responsibility, using a three-point scale (Beginning, Developing, Consistently).
Individual student comments will not be used in the Semester 1 Reports.
The new approach to Academic Reporting is a developing process. Further work will be undertaken in the coming months to determine how progress and achievement is best reported based on what we know to be important information about a student’s learning and progress.
On Wednesday 23 June, Week 10, from 3:30pm to 5:30pm, we will be holding Open Classrooms so that parents can spend time with their child viewing and discussing the work they have been completing this semester. It is our hope that this experience will provide valuable insights and important context for the reports.

Religious Education in the Classroom
Year 1 students visited St Augustine’s Grottos to provoke their interest about different prayer spaces. Provocations encourage students to think independently by encouraging their interests and the exploration of those interests. The following visual questions were used to provoke their interest: What do you see? What do you think is going on? What does it make you wonder? This was linked to composing prayers to use in different spaces.

This passage focuses on two main points. Firstly, the scribes (copyists and teachers of the Law in biblical times) criticizing Jesus and spreading rumours that he was “possessed by an unclean spirit”. Secondly, Jesus informs his audience that any person who does the will of God becomes a member of His family.
Reflection
How can I show respect to others? How do I negotiate confrontation? How do I include others within my family or my friendship group?

NSWCCC Cross Country Championships
Congratulations to Henry Gooley, Jed Newman, Emmett Crocker and Eli Cassidy who competed at the NSWCCC Cross Country Championships in Sydney on Tuesday. Jed finished 4th in his age group and will now go on to compete at the NSW All Schools Cross Country Championships in Sydney on Friday July 16th. Good luck Jed!

Gyoza ぎょうざ - Japanese Pan-Fried Dumplings
This week in Japanese, we are having fun in the cooking room making Gyoza.
Juicy on the inside, crispy and golden brown on the outside, these Japanese pan-fried dumplings, Gyoza, are a popular weeknight meal. These dumplings consist of ground meat and vegetable filling that are wrapped into a thinly rolled piece of dough, which is then sealed by pressing the edges together.
The key characteristic of gyoza (ぎょうざ) lies in its cooking method, which involves both pan-frying and steaming. They are first fried in a hot pan until crispy brown on the bottom sides, then a small amount of water is added before the pan is covered to quickly steam the entire dumplings. This technique gives gyoza the best mix of textures, where you get crispy bottoms and tender soft tops that encase the juicy filling inside.
INGREDIENTS
1 package gyoza wrappers (available from Woolworths)
1 Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc) (for frying each batch of gyoza)
¼ cup water (for frying each batch of gyoza)
1 tsp sesame oil
For The Gyoza Fillings
250g ground pork
2- 3 cabbage leaves finely sliced
2 spring onions (finely sliced)
1 clove garlic (minced)
1 knob ginger (2.5 cm: grated)
For The Gyoza Filling Seasoning
1 tsp sesame oil
1 tsp soy sauce
¼ tsp kosher/sea salt (I use Diamond Crystal; use half for table salt)
⅛ tsp freshly ground black pepper
For Dipping Sauce
1 Tbsp rice vinegar
1 Tbsp soy sauce
INSTRUCTIONS
To Make Gyoza Filling
- Cut green onions and cabbage into small pieces
- Combine the ground meat, cabbage, green onions in a large bowl.
- Add minced garlic and grated ginger to the bowl.
- Add the seasonings (1 tsp sesame oil, 1 tsp soy sauce, ¼ tsp kosher salt, 1 tsp sake, and ⅛ tsp freshly ground black pepper).
- Mix well and knead the mixture with hand until it becomes pale in color and sticky.
To Fold Gyoza
- Take a wrapper and place it in the palm of your non-dominant hand. Use a teaspoon to take a small amount of filling and put it in the center of the wrapper. Dip one finger in a bowl of water and draw a circle around the outer ¼” of the wrapper with your wet finger until it’s wet all around.
★ Folding Method 1 (Toward Center)
- Fold the wrapper in half over the filling and pinch it in the center with your fingers (but don’t seal yet!).
- Using your thumb and index finger, start making a pleat about once every ¼“ on the top part of the wrapper from the center toward the right side, making 3-4 pleats. Tip: As you fold each pleat, press the folded pleat tightly against the back part of the wrapper using your other thumb and index finger.
- Continue with the left side of the gyoza.
- Press the pleats and shape the gyoza.
★ Folding Method 2 (Toward One Side)
- Fold the wrapper in half over the filling.
- Using your left thumb and index finger, start making a pleat about once every ¼ inch on the top part of the wrapper.
- Once you make each pleat, press it down with your right thumb and make pleats toward the left side.
- Continue all the way till there is no more top wrapper to pleat.
- Press the pleats and shape the gyoza.
To Cook Gyoza
- Heat the oil in a large non-stick frying pan over medium heat. When the pan is hot, place the gyoza in a single layer, flat side down in a circular shape (or place them in two columns).
- Cook until the bottom of the gyoza turns golden brown, about 3 minutes.
- Add ¼ cup of water to the pan. Immediately cover with a lid and steam the gyoza for about 3 minutes or until most of the water evaporates.
- Remove the lid to evaporate any remaining water. Add 1 tsp sesame oil around the frying pan.
- Cook uncovered until the gyoza is nice and crisp on the bottom.
- Transfer to a plate and serve with dipping sauce. For the dipping sauce, combine the sauce ingredients in a small plate and mix all together.

Celebration Mass For The Sisters of Mercy & Farewell for Sr Aileen Wailes
Sunday 18 July, 10:15am, St Augustine’s Church, Meehan Street, Yass.
The Sisters of Mercy are leaving Yass, after 146 years of good works in our community. This includes their pivotal role in the education of so many, especially the poor and marginalised, at Mt Carmel.
We are going to honour them suitably, beginning with a Mass of Thanksgiving. Following Mass, we have planned a story telling/memory sharing time in the Mt Carmel PAC, a catered light lunch with the Sisters at approx. 1.15pm, and a suggested donation for this is $25pp. A photographic history of the Sisters’ life and work in Yass will be on display*.
We invite you to join us, for whatever part of the day you may wish to attend.
RSVPs for lunch are essential for catering and COVID-Plan purposes. Please RSVP by Wednesday 30 June.
